Last year, the City of Swan ran a recipe competition inviting residents to submit their food stories. The winning recipes were selected by local Swan Valley chefs, Herb Faust (Houghton Winery Cafe) and Caroline Taylor (Taylor's Art and Coffee House).
June's winning recipe is Breskvice - Croatian Peach-Shaped Cookies submitted by Sretna Rudez. Sretna elaborates;
"Breskvice is a traditional European dessert that takes me back to my home country, Croatia, where I migrated from 37 years ago. No wedding or special occasion is the same without a few of these wonderfully indulgent sweets. Bright and beautiful, these cookies represent family, celebration, happiness and joy. One day, I will pass this special recipe onto my daughter so that we can keep the tradition alive."

5 cups self-raising flourFilling
2 tsp rum or rum extract (optional )Decoration
2 drops red food colouring (or pink ) 2 drops yellow food colouring Method Add all ingredients except flour into mixer and mix. Slowly add flour and knead. Shape into even sized balls (approximately the size of a walnut). Place on prepared baking tray, not too close together. Bake until slightly golden. Allow to cool, then gently scoop a small piece from bottom of each cookie (being careful not to break cookie). Keep to add to filling.Filling
Mix all ingredients, including scooped out cookie crumbs. Take 2 cookies and using the filling, sandwich them together. Run a finger around the edge to smooth out any leaking fillingDecorate
Place 1/4 cup of water in small bowl and add yellow food colouring. In another bowl, repeat adding red food colouring instead. Quickly dip half of joined cookie in the yellow, then the other half in the red. Roll in castor sugar. Place on paper towel until dry.
